What is halloumi?
Halloumi is a cheese made from a mix of goat’s and sheep’s milk (and sometimes cow’s milk), with a texture commonly described as "squeaky". Halloumi has a high melting point, meaning it can be easily fried or grilled. This means it’s commonly used as a meat alternative. The cheese is associated with the island of Cyprus, where it’s been produced for centuries, but it’s also popular throughout the eastern Mediterranean, in countries such as Turkey, Israel and Lebanon. By 2013, the demand for halloumi in the UK had surpassed that of every other country except Cyprus.
Slicing partway through the halloumi at regular intervals (hasselback) opens up more surface area, resulting in maximum crispiness. Serve this easy traybake with flatbreads and a green salad.
