Spicy prawn and peanut rice salad recipe

  • pouch of coconut rice
  • 200g cooked large king prawns
  • ½ red pepper
    sliced
  • ¼ small red cabbage
    finely shredded
  • 4 spring onions
  • ½ red chilli
    finely chopped
  • handful of coriander
    chopped, plus extra to serve
  • handful of mint
    chopped, plus extra to serve

DRESSING

  • 1 tbsp dark roast peanut butter
  • 1 lime
    juiced
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar

Method

  • step 1

    Heat the rice following pack instructions, tip into a bowl and set aside to cool.

  • step 2

    To make the dressing whisk all the ingredients with 1 tbsp of cold water to make a smooth sauce.

  • step 3

    Toss the prawns, pepper, cabbage, spring onions and herbs with the rice. Drizzle with the dressing then scatter over extra herbs to finish.
